Rack of lamb is an impressive cut formed from eight ribs. This can be roasted as one of when two are joined together forms the classic ‘Guard of Honour’.
A ‘Crown Roast’ can also be formed by joining two/three racks, depending on size required to form a circle and lavishly filled with stuffing or vegetables of your choice.
